What makes a great plate of fuchka?

Three things decide a plate of fuchka: the shell, the filling and the water. The shell has to be thin and fried the same day, so it shatters instead of bending. The filling is spiced potato and chickpeas, chopped fine and never wet, so the shell stays crisp until it reaches your mouth.

The tamarind water is where every cart has its secret. Ours is made in house every day: tamarind, roasted cumin, black salt, green chili and coriander, cold enough to make the first sip a surprise.

At the window we fill each shell in front of you and hand it over with a cup of the water. Pour, eat in one bite, repeat. Ask for mild, medium or Dhaka hot.

A fuchka waits for nobody. Eat it the moment it is filled, while the shell is still crisp and the water is still cold. That is the whole secret, and it works every time.

If you like it creamy, order doi fuchka: the same shells topped with cold yogurt, tamarind and date chutney, a dusting of chaat masala and crunchy sev. If you like it with a pour, order panipuri and get the green spiced water instead.
