Walk through Dhaka in the evening and you will pass a momo steamer on almost every busy corner. The dumpling came down from the hills and the city made it its own: softer, spicier, and always with a chutney on the side.

What is in it

Steamed momo, served hot with a spicy tomato chutney. The wrapper is thin and soft from the steam, the filling is seasoned so it needs nothing else, and the chutney is where the heat lives. Dip, bite, repeat.

How to eat it

Momo is best in the first few minutes, while the steam is still coming off the plate. Eat it at the truck if you can. If you are taking it home, keep the box closed until you sit down and it will still be soft.

Mild, medium or Dhaka hot

The momo itself is gentle. The chutney is where you choose: mild for the kids, Dhaka hot for the rest of the table.
